Lunch Box Peanut Butter Cookies....


1/2 cup creamy peanut butter
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly-packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup flour 
1/2 teaspoon baking soda
1/2 teaspoon salt
  1. Preheat oven to 350°F. Place oven rack just above oven center. 
  2. In a large bowl, combine peanut butter, butter, sugar, brown sugar.  Beat well.  Then add egg and vanilla; beat with an electric mixer until light and fluffy. In another bowl, mix together flour, baking soda and salt. Stir into butter mixture until well blended.
  3. Shape dough into 1-inch balls. Place balls 3 inches apart on ungreased cookie sheet. If you'd like, gently flatten each ball with fork in a criss-cross pattern.
  4. Bake at 350°F until lightly browned, 8 to 10 minutes. Do not over bake. Remove cookies from sheets; cool on wire racks.
